In the heart of Toledo lies a true gem: Jewish caves with centuries of history, dating back to the 9th century. These caves were transformed into the cellar of Restaurant Adolfo in 1979, coinciding with the opening of the restaurant. Since then, we have built an extraordinary collection, which today includes 45,000 bottles and more than 2,500 internationally renowned references.

Originating from the Cigarral Santa María Vineyards, the only urban vineyard in Spain, Pago del Ama is located in the iconic Cigarrales area of Toledo, recognized as the only vineyard situated within a city declared a UNESCO World Heritage site.
